After finding out that my son was allergic to eggs, I worried that I wouldn’t be able to feed him any of the delicious foods that we get to enjoy. Bread, pasta, muffins, cakes, mayonnaise, and tons of other foods that I never even realized contained eggs such as marshmallows. After doing a little research I found that there are tons of websites, cookbooks, and brands of foods that are geared towards people with food allergies. My only concern was how these products tasted. While I’m sure my son wouldn’t know the difference since he is so young and not used to those foods yet, I wanted to find foods that my husband and I could enjoy as well. Because lets face it, I didn’t want to cook/bake two of everything from here on out!
After doing some searching at our nearby Kroger, I found these products by Cherrybrook Kitchen. They make icing, cake mix, brownie mix, cookie mix, etc. The first item I bought was their chocolate chip pancake mix. It is not only egg free, but it is also peanut free, dairy free, nut free, gluten free, and wheat free! This is great for so many different food allergies. Although it was more expensive than your typical pancake mix, I figured I’d give it a try.
We actually decided to make waffles because in my opinion they’re just easier. I didn’t have any rice milk here at the house, so I used my husband’s Silk Soy Milk. They were AMAZING! No, seriously. Not only did my 11 month old son love them, but my husband and I did too! I went ahead and made the entire box worth and we froze the leftovers to snack on throughout the week. We’ve made these several times since and look forward to trying out Cherrybrook Kitchen’s other products.
I think you can say he’s a fan! Hehe. There were melted chocolate chips everywhere! I’m pretty sure the ones in his pants were being hoarded for later.
